Mexican Gastronomy

Mexican gastronomy?

Mexican cuisine is renowned for its variety and flavour. Popular dishes include tacos, enchiladas, quesadillas, burritos, tamales and mole poblano

There are a number of delicious regional cuisines, such as the Yucatán Peninsula's Maya cuisine, the seafood of the Pacific Coast and the mountain dishes of the Sierra Madre.

When it comes to drinks, Mexico is famous for its tequila, but also a beautiful non alcoholic fermented drink called Tapache.

Traditionally made with pineapple trimmings and flavoured with cloves and cinnamon we have successfully experimented with rhubarb and strawberry waste to add value.

Sugar and water are added at a rate of 10% sugar to water by weight and it is left to ferment at room temperature for around five days before straining, bottling and refrigerating.
